  • 1/2 cup honey or maple syrup
  • 1/2 cup peanut butter
  • 1/2 cup mixed nuts (chopped)
  • 1/3 cup dried cranberries
  • 1/3 cup unsweetened coconut flakes
  • 2 tbsp chia seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix old-fashioned oats, mixed nuts, coconut flakes, dried cranberries, and chia seeds.
  3. In another bowl, combine honey (or maple syrup) and peanut butter until smooth.
  4. Add the wet mixture to the dry ingredients and stir until well combined.
  5. Spoon the mixture into muffin tins, pressing down firmly.
  6. Bake for 15-20 minutes until golden brown.
