  • 1 whole Branzino (about 1.5 lbs)
  • 3 tbsp extra virgin olive oil
  • 1 lemon (zested and sliced)
  • 1 cup fresh herbs (parsley, thyme, dill)
  • 4 cloves garlic (whole)
  • 1 cup cherry tomatoes (halved)
  • Sea salt (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the Branzino under cold water and pat dry. Place it on a parchment-lined baking sheet.
  3. Drizzle both sides with olive oil and sprinkle generously with sea salt. Insert garlic cloves inside the fish.
  4. Stuff the cavity with lemon slices and fresh herbs; scatter halved cherry tomatoes around it.
  5. Roast in the oven for 20-25 minutes until the skin is golden brown and the fish flakes easily with a fork.
  6. Serve garnished with additional lemon wedges and fresh herbs.
