  • 3 lbs beef short ribs
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 tbsp tomato paste

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season the beef short ribs with salt and pepper.
  3. In a large Dutch oven over medium-high heat, heat olive oil; sear the ribs until browned on all sides (about 3 minutes per side). Remove and set aside.
  4. In the same pot, sauté onions, carrots, and garlic until softened.
  5. Add red wine to deglaze the pan, then stir in tomato paste and beef broth.
  6. Return short ribs to the pot, cover, and braise in the oven for about 3 hours until fork-tender.
