  • ½ cup whole milk

  • 3 oz semi-sweet chocolate chips (for glaze)
  • 2 tbsp cornstarch
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients along with milk, mixing until smooth.
  4. Fill each cupcake liner two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  5. For the custard filling, whisk together heavy cream, cornstarch, sugar, and vanilla in a saucepan over medium heat until thickened; allow to cool completely.
  6. For the glaze, melt chocolate chips with heavy cream in a microwave-safe bowl; stir until smooth.
  7. Once cupcakes are cooled, slice off the tops and fill generously with custard before replacing tops. Drizzle chocolate glaze over cupcakes just before serving.
