  • 1 tbsp paprika
  • 1/2 tsp cayenne pepper

  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp extra virgin olive oil
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Prepare the mango salsa by mixing diced mango, red onion, cilantro, lime juice, salt, and pepper in a bowl. Set aside.
  2. In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, thyme, salt, and black pepper to create the blackening spice mix.
  3. Pat dry the cod fillets with paper towels. Brush both sides lightly with olive oil and coat generously with the spice mix.
