Ingredients

  • All-Purpose Flour
  • Unsalted Butter
  • Granulated Sugar
  • Salt
  • Cold Water
  • Fresh Berries (strawberries, blueberries, raspberries)
  • Heavy Cream
  • Powdered Sugar
  • Vanilla Extract

Instructions

  1. Prepare the Pastry Dough: In a bowl, mix flour, sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add cold water until a dough forms.
  2. Chill the Dough: Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat Oven: Set your oven to 375°F (190°C).
  4. Roll Out Dough: On a floured surface, roll out chilled dough to about 1/8 inch thick. Cut into circles for tartlet pans.
  5. Form Tartlet Shells: Press dough circles into greased mini tartlet pans and prick bottoms with a fork.
  6. Bake Until Golden: Bake for 15-20 minutes or until golden brown. Cool completely.
  7. Create Filling: Whip heavy cream with powdered sugar and vanilla extract until soft peaks form; fold in half of the berries.
  8. Assemble Tartlets: Spoon whipped cream mixture into cooled shells and top with remaining berries.
