  • 4 medium fresh beets (about 1 lb)
  • 1 cup diced cucumbers (about 1 large cucumber)
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh dill
  • 2 tbsp extra virgin olive oil
  • 1 tbsp aged balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and roast for 45-60 minutes until tender. Allow to cool before peeling and cubing.
  2. While the beets are roasting, chop cucumbers into bite-sized pieces and place them in a large bowl.
  3. In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to create the dressing.
  4. Once the beets are cooled, peel off the skins and chop them into cubes. Add the beets to the bowl with cucumbers.
  5. Sprinkle crumbled feta and chopped dill over the salad. Drizzle with dressing and gently toss to combine.
  6. Serve immediately or transfer to a serving platter garnished with additional dill.
