  • 2 lbs lean beef (flank steak or sirloin)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp freshly cracked black pepper
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Slice the beef against the grain into thin strips (about 1/4 inch thick).
  2. In a bowl, whisk together soy sauce, brown sugar, Worcestershire sauce, garlic powder, black pepper, and cayenne pepper.
  3. Marinate the sliced beef in the mixture in a resealable bag or dish for at least 4 hours, preferably overnight.
  4. Preheat your oven to its lowest setting (around 170°F or 77°C) and line baking sheets with foil or parchment paper.
  5. Arrange the marinated beef strips on prepared sheets without overlapping.
  6. Dry in the oven for 4 to 6 hours until desired chewiness is reached.
  7. Let cool completely before storing in an airtight container.
