  • 1 lb lean ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • Vegetable oil for frying

Instructions

  1. In a skillet over medium heat, brown the ground beef while breaking it apart. Add the diced onion and cook until translucent, then stir in the minced garlic.
  2. Mix in cumin and cook until fragrant.
  3. Lay each tortilla flat, place a generous portion of the beef mixture in the center, top with shredded cheeses, and fold both sides of the tortilla over the filling.
  4. Heat vegetable oil in a deep pan over medium heat. Carefully add chimichangas seam-side down and fry until golden brown on all sides.
  5. Remove from oil and drain on paper towels before serving hot with salsa or sour cream.
