  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 2 large eggs
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Cut chicken breasts into strips and season with salt and pepper.
  3. In one bowl, whisk the eggs; in another bowl, combine panko breadcrumbs and Parmesan cheese.
  4. Dip each chicken strip into the egg mixture, then coat thoroughly with the breadcrumb mixture. Arrange on the baking dish in a single layer.
  5. Bake for 20-25 minutes until golden brown and cooked through (internal temperature should reach at least 165°F/74°C).
  6. While baking, mix soy sauce and honey in a small bowl for dipping.
