  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 4 large flour tortillas
  • 2 cups shredded cheese (1 cup cheddar, 1 cup Monterey Jack)
  • 1 cup diced bell peppers (any color)
  • 1 cup diced sweet onion
  • 2 tsp taco seasoning
  • Sour cream for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, cook seasoned chicken breasts for 6-7 minutes per side until golden brown. Remove and chop into pieces.
  3. Sauté diced onions and bell peppers in the same skillet for about 5 minutes until softened.
  4. On each tortilla, layer shredded cheese, chicken pieces, sautéed veggies, and top with more cheese before folding in half.
  5. Place quesadillas on a parchment-lined baking sheet and bake for 12-15 minutes until golden and crispy.
  6. Let cool slightly, then slice into wedges and serve warm with sour cream.
