Baked BBQ Chicken Meatballs are a deliciously satisfying dish that combines the savory goodness of ground chicken with a tangy barbecue glaze.   • 1 lb boneless, skinless chicken breasts (ground)
  • 2 cloves fresh garlic (minced)
  • 1 cup plain breadcrumbs
  • 1 large egg (room temperature)
  • ½ cup BBQ sauce (plus extra for glazing)
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray or parchment paper.
  2. In a large bowl, combine ground chicken, minced garlic, breadcrumbs, egg, and half of the BBQ sauce. Mix until well combined.
  3. Form mixture into meatballs about 2 tablespoons each and arrange in the prepared baking dish.
  4. Bake for 20-25 minutes until golden brown and internal temperature reaches 165°F (75°C).
  5. Brush remaining BBQ sauce on top and bake for an additional 5 minutes.
  6. Serve hot with extra sauce drizzled over.
