  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 8 oz cream cheese, softened
  • 1/4 cup Baileys Irish Cream
  • 1 tsp vanilla extract
  • Optional: 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a saucepan over low heat, melt butter and sugar until combined. Stir in cocoa powder until smooth.
  3. Remove from heat; let cool slightly. Whisk in eggs one at a time, then fold in flour gently.
  4. In another bowl, beat cream cheese until smooth. Gradually mix in Baileys and vanilla until creamy.
  5. Pour half of the brownie batter into the prepared pan. Add dollops of cheesecake mixture on top, then layer remaining brownie batter. Swirl gently with a knife.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean with fudgy bits attached. Allow cooling before cutting into bite-sized pieces.
