  • 1 cup organic quinoa
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ½ cup fresh herbs (cilantro or parsley), chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a pot, combine quinoa and 2 cups water; bring to a boil. Cover and simmer for 15 minutes until fluffy.
  2. While quinoa cooks, chop cucumber, halve cherry tomatoes, and dice avocados.
  3. Chop fresh herbs finely.
  4. In a bowl, whisk olive oil and lemon juice; season with salt and pepper.
  5. When quinoa cools slightly, mix it with veggies and herbs in a large bowl. Drizzle dressing over top and toss gently.
  6. Serve immediately or chill for 30 minutes to enhance flavors.
