Ingredients

Scale
  • 2 cups peeled and diced starchy potatoes (Russets)
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 tsp salt
  • 2 tbsp melted butter
  • Optional toppings: Sour cream or sautéed onions

Instructions

  1. Boil the diced potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool slightly.
  2. Mash the potatoes until smooth. In a bowl, mix in the flour, egg, and salt until you achieve a soft dough.
  3. On a floured surface, gently knead the dough until combined. Roll into ropes about 1 inch thick and cut into bite-sized pieces.
  4. Boil dumplings in salted water in batches; they’re done when they float to the top (3-4 minutes). Toss with melted butter before serving.
