1 cup long-grain rice
1 cup cooked Andouille sausage
2 boneless chicken thighs, diced
1 cup bell peppers (mixed red and green), chopped
1 medium onion, chopped
3 cloves garlic, minced
2 tablespoons Cajun seasoning (adjust to taste)
3 cups low-sodium chicken broth
1 can (14.5 oz) crushed tomatoes
1 cup shrimp, peeled and deveined (optional)
Instructions
Chop all vegetables and dice meats.
In a large pot over medium heat, brown the sausage for 5-7 minutes.
