  • 1 pound skinless fresh salmon fillets
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 2 tablespoons Dijon mustard
  • 2 tablespoons chopped fresh dill or parsley
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon garlic powder

Instructions

  1. Chop the salmon fillets into small pieces using a knife or food processor.
  2. In a large bowl, mix chopped salmon with panko, egg, mustard, herbs, salt, and pepper.
  3. Form the mixture into patties about half an inch thick.
  4. Preheat the air fryer to 375°F (190°C).
  5. Lightly spray the air fryer basket with cooking spray and place patties in a single layer.
  6. Air fry for 10-12 minutes until golden brown and cooked through, flipping halfway.
  7. While cooking, mix yogurt, lemon juice, and garlic powder in a separate bowl for the sauce.
  8. Serve patties on buns or lettuce wraps with sauce drizzled on top.
