  • 1 box cake mix (any flavor)
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water (room temperature)
  • 2 tsp red gel food coloring
  • 2 tsp blue gel food coloring
  • 1/2 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line cupcake tins with colorful liners.
  2. In a large bowl, mix cake mix, water, vegetable oil, and eggs until well combined.
  3. Divide the batter into three bowls. Color one with red gel, another with blue gel, and leave the third plain.
  4. Layer spoonfuls of each colored batter into cupcake liners, filling them two-thirds full. Swirl gently with a toothpick.
  5. Bake for 18-22 minutes or until a toothpick inserted comes out clean. Allow cooling on a wire rack.
  6. For frosting, cream softened butter in a bowl, gradually adding powdered sugar and vanilla until fluffy.
  7. Frost each cooled cupcake creatively using a piping bag or spatula.
